Adzuki Bean Burgers

MAKES 2 BURGERS
Instead of a greasy, cholesterol-loaded animal burger, why not try one of these tasty and healthy bean burgers. Or, if you’re in a hurry why not grab one of the many varieties of veggie burgers available instead. To make a more substantial meal, serve with some potato wedges.

½ cup dry adzuki beans
1 red onion, finely diced
2 cloves garlic, crushed
1 tsp Massell ‘beef style’ stock powder
½ tsp dried mixed herbs
½ cup fresh breadcrumbs
1 tbsp plain flour
1 tsp Worcestershire sauce (anchovy free)

Soak adzuki beans in a large pan of water overnight. Bring to the boil and simmer for 40 minutes. Drain and set aside, mash when cool.

Fry onion and garlic in a little olive oil until golden brown then add to beans together with the stock powder, herbs, breadcrumbs, flour and Worcestershire sauce and mix well.

Divide the mixture into two and shape into burgers, fry in a little oil until brown on each side

Serve in a bun with your favourite extras. Here we have used lettuce, red onion, gherkin, a Tofutti ‘cheese’ slice, tomato sauce, mustard and vegan mayonnaise.
