Tasty Lemon Sago (vegan)

This fast, easy recipe is great for a dessert or snack. It can be easily multiplied for larger servings. This quantity serves about  three or four in desert bowls.

You will need:

1 cup sago
4 cups water
1.5 tbsp sugar (brown gives extra golden colour, but any sugar is fine)
2 tbsp golden syrup
Juice of 2 lemons

Optional: a few peelings of lemon skin for extra zestiness, but can add bitterness

Method:

1. Boil water in saucepan and add sago
2. Cook for around 6-10mins, until sago is mostly translucent. Stir with wooden spoon so sago doesn't stick to pan.
3. Bring heat to low, and add sugar, golden syrup, lemon juice and peel (if desired). Cook for a further minute, keep stirring.
4. Serve hot for runny texture, or cool in the fridge for a more set pudding. If lemon peel was added, either remove after cooking or allow to cool with it in, and take out before serving.

Great with vegan cream, icecream, or vanilla soy yoghurt. Experiment!
